Sau 2 giờ đun, nhặt bỏ bã các loại gừng, hành lá, nguyệt quế. Để lửa vừa đun tiếp đến khi nước sốt giảm xuống còn khoảng 1 chén. Thêm phần đường còn lại cùng giấm và nước tương vào. Đun cho đến khi chất béo từ sườn chảy ra kết hợp với các chất sốt trở nên sền sệt bao quanh miếng sườn thì tắt bếp, cho tỏi băm và một chút muối vào. Trút sườn ra đĩa, rắc thêm một chút mè. Có thể ăn cùng cơm nóng hoặc mì đều rất ngon.
